I agree! So glad to be cooking again- I pretty much grilled in the backyard all summer since it was so hot.
Ground turkey is a staple for us also.  Last night I made Moroccan Lemon and Cardamom Meatballs with Ina Garten’s Curried Couscous salad and some roasted zucchini. So great!  By baking the turkey meatballs and using a thermometer, I can be sure the turkey doesn’t dry out. Huge hit with the whole family.

I’m back into sheet pan meals for fall. Yesterday’s lemon chicken & vegetables was a beautiful display of color. Veggies included purple cauliflower, red onion, orange, yellow and green peppers, asparagus, and cherry tomatoes, and I found tri color baby potatoes that included the prettiest dark purple potatoes that I’ve ever seen. Tossed with a little olive oil and roasted with 2 sliced lemons in the pan, it was light & bright—a favorite!

Hi Drinkmorewater and Hulagirl- Both of your recipes are so inspiring! I have not roasted zucchini in years. We tend to do zoodles or pan sautéed. And purple cauliflower. Yum! What a colorful delight. I think lemon adds so much to any dish.
