Hello,
I've been eating healthy for about a month and a half. My lunches and dinners mostly contain grilled chicken and I'm starting to get sick of its boring taste. Any ideas how can I season them or grill them in a certain way to be tasty?
Preferably these ways doesn't contain any fat.
Thank you!

I always bake all of my chicken when meal prepping on Sundays at the same time but I take one large casserole dish and build wall dividers with aluminum foil so that I have three sections and for example one section will be bbq sauce, one section zesty Italian, and the other section herb and garlic marinate so that I don't have the same thing all week!

Kathty, I appreciate the links you provided.
Sbelle, what a great idea about creating 3 sections for your baked chicken.

Hi Norah- I really like the website yummly.com for recipes on just about anything. Recently I have been marinated my chicken breasts for about 1-2 hours before cooking. For 8 oz of chicken I'd use the following for a marinade:
2 garlic cloves + 1 T fresh minced ginger + 1 T olive oil + 2 tsp orange juice + 1 T tamari. I mix this on the chicken and then place it in the refrig for to marinade for 2 hours. I then cook it on the grill. Yummy!

DDT, thanks so much for that recipe. My grocery store doesn't stock whole wheat panko, only the plain or seasoned kind (with way too much sodium). I will look for whole wheat panko now in other stores. Kikkoman has a lower sodium whole wheat panko that I'll look for: http://www.kikkomanusa.com/homecooks/products/products_hc_details.php?pf=11304
Also, I didn't think to dredge in yogurt. What a great idea. What type of yogurt do you use - plain or greek style? Nonfat or ?
Best,
kathy

I like to marinade my chicken before grilling in Mojo (a citrus marinade). Fresh Mojo is great, but you also can pick up a bottle in the Goya section of the supermarket.
- "Quick asian bbq sauce" (i basically add soy sauce and sesame oil and ginger to regular bbq sauce).
- Not direct grilling, but I still use the grill for this. Works for both chicken and fish: Brush/smother the fillet with ginger paste (i get store bought refrigerated ginger paste in a tube, which has some sweet to it), put it in aluminum foil, add thyme, olive oil, butter, onions, salt and pepper, and wrap it up, throw it on the grill. The onions caramelize and it makes a nice broth.
